JALAPENO CORN BREAD

 

Pre-heat oven to 425 degrees. Grease (I use about 3 Tablespoons of butter) iron skillet and place in oven.

In a bowl, mix:

1 cup all-purpose flour
1 tsp salt
3 tsp baking powder
1/3 cup of sugar
1 cup cornmeal

Add:

1 cup milk
1 large egg, lightly beaten
1/4 cup butter or margarine(melted)
1/2 drained and diced jalapeno peppers (You can use fresh jalapeno peppers)

Combine remaining ingredients in large bowl. Stir in egg mixture just until moistened. Pour batter into hot skillet and bake 20 minutes until just golden.
