GRANDMA'S RICE PUDDING

2 1/2 cups cooked rice (DO NOT USE INSTANT!)
2 cups whole milk (or 1 cup condensed and 1 cup
water)
vanilla to taste
grated lemon peel to taste
juice of 1/2 lemon
raisins to taste
2 medium or large eggs
1 stick of butter (melted)
cinnamon to taste

Butter a round caserole dish, large enough to
hold all ingredients. Mix together all ingredients
and bake in a 375 oven until the top is golden
brown.

Note: In the tradition of all good recipes
handed down from generation to generation,
there are few set amounts in this. I suggest you
try it anyway, and do as it says: add
ingrediaents until it tastes good to you.
