FRIED CHICKEN

Wash chicken, shake in flour. Use 2/3 tbls Crisco (butter flavored) in pan.

Brown chicken at 350 deg, salt and pepper to taste. Brown all over, turn heat down to 300 to 325 degrees, covered. Keep watch so it doesn't burn.

Then take cover off after about 1 hour and check for doneness.

Cook potatoes (and rice). After potatoes are done, take chicken up on a platter and make gravy using grease with milk like cube steak gravy.
