SPICY RICE

3/4 cups uncooked long-grain rice
2 cups water, divided
15 bacon slices
1 medium onion, chopped
2 celery ribs, thinly sliced
2 small carrots, thinly sliced
1/2 cup frozen sweet green peas, thawed
1/4 teaspoon garlic salt
1/2 teaspoon ground red pepper
3.4 teaspoons seasoned pepper

Bring rice and 1 1/2 cups water to a boil; cover; reduce heat, and simmer 20 minutes or until liquid is absorbed.

Cook bacon in a large skillet until crisp; drain; reserving 2 tablespoons drippings in pan

Saute' onion, celery, and carrot in hot drippings over medium high heat 3 minutes or until tender.

Add peas, and saute 3 minutes. Stir in rice, remaining ½ cup water, bacon and seasonings, and cook 5 minutes or until thoroughly heated. Serve immediately.
